Recipe for pesto – a true taste of Italy
Our go-to pesto – just as good on pasta as on grilled food
If you ask the Swede (Eric), there is no meal that isn't made better with pesto. The rest of Team Expa has eventually agreed – because this little green treat elevates the flavor of fish, meat, pasta, and bruschetta alike.
Homemade pesto is simpler than you think – and tastes a thousand times better than the store-bought version. Here is the Swede's own Pesto recipe – made many times, adjusted with love, and tested on hungry guides and friends.

🛒 What you need for one portion of pesto:
1 large bunch of fresh basil
½ dl pine nuts (or walnuts – also works fine)
Approx. 50 g parmesan (feel free to add a bit more, we love flavor!)
3 cloves of garlic
Approx. 1½ dl good olive oil
A little salt and pepper – taste as you go
👨🏼🍳 How to make pesto:
Put basil, garlic, and nuts in a food processor, mini chopper, or mortar.
Add olive oil little by little while processing/mixing.
Stir in grated parmesan at the end. Season with salt and pepper.

As a sauce on pasta
As a topping on bruschetta
With grilled fish, meat, and vegetables
As a dip for vegetables
Or just on a good slice of bread with mozzarella…
